Baked cheesecake....kindred spirits

This cheesecake is a traditional baked variety, which just melts in your mouth, not before slightly sticking to the roof of your mouth with that certain"tckk" from the lemon. This recipe comes from my favourite Aunty Sue. Whenever I'm carefully folding the frothy egg whites into the philly cheese, a sense of warmth and calm awashes me which feels like i'm in my Aunty's prescence. This cheesecake is so dear to me because it symbolises Aunty Sue perfectly - sweet, delicate and light natured filling, in a warm and supportive base that has never let me down.
