Halloumi and beetroot salad

I mostly enjoy baking, but sometimes I do get a lot of pleasure out of making interesting dinners. I love the colours of this salad and how the flavours create a perfect harmony with each other. I have also added to this salad by having chicken and avocado with it, perfecting perfection! This is the kind of salad my husband will eat! If it has fried cheese, then he's a happy man.

  2. Hey Ma

    The beetroot can be in any form, I've used baked beets before but for this one I just used a bottle (they don't have cans over here). So if you use either slices or whole baby beets and put them in a little blender (I had to use a stick blender) and put a little lime juice in with it and blend away until it become a puree.

    Then just cook your halloumi in a little bit of oil (and only a little, too much and it'll drown instead of fry). We had couscous in this meal because Pete was hungry, but its optional obviously.

    So then just have your rocket, optional couscous and sometimes avo on a plate, add the grilled halloumi, and then drizzle the beetroot over the top and tadaaaa!!
