Zucchini Fritters

Just a little snack, either to have as an entree or accompanied with a main meal. Without being able to have much flour or any grains, it is becoming quite a fun challenge to still cook the things I enjoy (I have veto'd the restrictions when it comes to my own baking though).

For these fritters, I used 1 grated zucchini (courgette), some grated parmesan cheese, almond meal and salt and pepper. Simply combine all ingredients and form into little balls. Fry in a little olive oil until browned on both sides. Use as much of each ingredient as you desire. The almond meal was really suprising actually, it added such a nice flavour to the zucchini, and acted as a bit of a binding agent. Simple, healthyish and yum yum yum.
