A cinnamon moment in time...

I made these cinnamon melting moments back in Oxford and have been craving them ever since! For me it was the combination of three wonderful worlds! Firstly, there was the buttery biscuit that I have always loved; secondly was the addition of cinnamon, my favourite spice of all; and thirdly, was the white chocolate ganache that I put between the biscuits! I have never made melting moments with icing sugar before, but the result was a creation that actually truly melted in your mouth! The recipe was based on Donna Hay's melting moments, with of course, the addition of cinnamon and the white chocolate ganache instead of a butter icing filling!

Ingredients:

175g butter, softened
30g icing sugar
135g plain flour
1 teaspoon baking powder
2 heaped (HEAPED) teaspoons of cinnamon

Method:
1. Cream together the butter and icing sugar until pale and creamy

2. Add the cinnamon and flours and fold through gently.

3. I then piped the mixture into rounds, but piping isn't necessary of course!

4. Bake in a moderate oven for about 12minutes or until just lightly golden brown on the edges.

5. When cooled, spread with icing of your choice, I used a white chocolate ganache and it was heaven.

6. To make the ganache, use melted white chocolate with icing sugar and butter and combine until the right thickness to hold its own form.

Truly a melting moment!!!!
